Special emphasis is placed on stress resistant, immune competence, and reproductive and growth performance.

Dr. Carr serves as coordinator for Hazard Analysis Critical Control Point (HACCP) systems training to meat and poultry processors in the state of Florida. Additionally, works to provides educational programs in meat and livestock evaluation to youth and food service personnel relative to food safety and quality.

Writes publications and creates presentations covering beef cattle management, nutrition, grazing and feedstuff utilization.

Liaison with horse industry. Leadership of Extension Horse Program. Conducts clinics, schools, and demonstrations for youth and adults. Works with the Horse Advisory Council, Latin American Short Course, various breed associations and the Southern Regional 4-H Horse Programs - Horsemanship Schools, shows, and national 4-H contests. Serves on the Executive Committee for Eastern National 4-H Roundup and the American Youth Horse Council.
