Meat Processing Center
The University of Florida Meat Processing Center (establishment number 6537) is a Federal (USDA- FSIS) Inspected facility and is within the UF/IFAS Department of Animal Sciences.
The mission of the Meat Processing Center is to facilitate teaching, extension and research programs for the Animals Sciences Department.

Current Research Projects:
- Diet and managements effects on carcass traits of beef and pork
- Genetic influences on meat tenderness
- Breed effect on Pork and Beef Quality
- Marketability of Chuck and Round
- Processing procedures effect on yield and palatability
- Storage life on whole muscle and processed meat items
All animals are slaughtered and products are made under the guidelines and regulations of USDA-FSIS.
