Dr. Jason M. Scheffler

Associate Professor - Food Safety
Undergraduate Coordinator

Dr. Jason Scheffler has a teaching and extension program primarily focused on food safety. His current extension responsibilities include coordinating Hazard Analysis and Critical Controls and Preventive Controls (HACCP) and Animal Food training programs. He teaches Introduction to Animal Science and is co-instructor for HACCP Systems, Senior Seminar, and Meat Technology. His research program is focused on assisting stakeholders by providing validation data to support science-based decisions in the design and implementation of food safety plans.

    Meat Science and Food Safety

    Dr. Scheffler coordinates the Hazard Analysis and Critical Controls and Preventive Controls for Animal Food training programs and provides consultation to facilities implementing these food safety systems. He leads the Gator Grill Masters program and provides support to additional adult and youth programs in meat science.

    Research Summary

    Dr. Scheffler conducts research in food safety, primarily focusing on validation of meat processing methods to control food-borne hazards to support facility HACCP plans. Current efforts include defining sous vide parameters for effective risk management for home and food service use, validating pathogen control during production of dried meat products, and evaluating potential for bioaerosol transmission of pathogens in livestock operations.
